Ingredients

  • 20 oz cheese tortellini, uncooked Approximately 5 cups uncooked.
  • 10 oz cherry tomatoes, halved Adds sweetness and color.
  • 8 oz Mozzarella pearls Creamy bites of cheese enhance flavor.
  • 1 cup chopped spinach Provides freshness and nutrition.
  • 1/4 cup chopped basil Brings aromatic herbal notes.
  • 1/2 cup olive oil Enriches the dressing and adds healthy fats.
  • 2 T balsamic vinegar Offers tanginess to balance the flavors.
  • 3-4 cloves garlic, minced Infuses the salad with depth and richness.
  • 3/4 tsp Italian seasoning A blend that enhances the Italian theme.
  • 1/2 tsp salt and pepper Essential seasoning for taste enhancement.
  • Balsamic glaze Optional, for a sweet finishing touch.

Method

  1. Cook tortellini according to package instructions until al dente, then strain and rinse under cool water to stop the cooking process.
  2. While the tortellini is cooking, prep your fresh ingredients by chopping the spinach, halving cherry tomatoes, mincing garlic, and measuring out other components.
  3. In a large bowl, combine the cooled tortellini with spinach, tomatoes, mozzarella pearls, basil, and minced garlic.
  4. Drizzle olive oil and balsamic vinegar over the mixture before adding Italian seasoning along with salt and pepper; toss well until everything is evenly coated.
  5. Allow the salad to chill in the refrigerator until ready to serve; this helps meld all the flavors together beautifully.
  6. Just before serving, give it another toss to redistribute any dressing settled at the bottom and drizzle with balsamic glaze for an extra touch of flavor.
