Ingredients

  • 2 medium green apples Choose firm apples for the best texture.
  • 2 medium red apples A sweet variety adds contrast in flavor.
  • ¾ cup dried cranberries These provide a chewy texture and tartness.
  • 1 cup pecans Toasting enhances their nutty flavor.
  • 1 cup grapes Use seedless grapes for easy snacking.
  • 3 medium navel oranges Fresh oranges add juiciness and brightness.
  • 1 medium lemon Juiced to prevent browning in the apples.
  • ½ cup orange juice Freshly squeezed juice gives the best flavor.
  • ¼ cup white sugar Adjust sweetness according to taste preferences.
  • ¼ tsp apple pie spice This warm spice blend complements the fruits beautifully.
  • 1 zest lemon Adds aromatic citrus notes to the dressing.
  • 1 zest orange Enhances the overall flavor profile with freshness.

Method

  1. Preheat oven to 350°F. Place pecans on a baking sheet and place in the oven while it’s heating up. Remove them from the oven when you can smell them, about the same time as when the oven is fully heated. Allow them to cool completely before adding to the salad.
  2. In a small saucepan, mix together orange juice, sugar, apple pie spice, zest of one lemon, and zest of one orange. Place over medium heat and whisk to combine thoroughly. Bring this mixture to a low boil and let it simmer for 3-4 minutes until slightly thickened.
  3. Core both types of apples and slice them into bite-sized pieces for easy eating. To prevent browning, toss these apple pieces with juice from half a lemon right after slicing.
  4. Peel the navel oranges carefully and cut them into bite-sized pieces as well, discarding any seeds if necessary. These juicy pieces will add wonderful texture to your fruit salad.
  5. In a large mixing bowl, combine sliced apples, dried cranberries, toasted pecans, grapes, and orange pieces together gently so they don’t break apart.
  6. Drizzle your cooled dressing over the mixed fruits in the bowl, then toss everything together until well coated in dressing. Serve immediately for optimal freshness or refrigerate briefly before serving if desired.
