Ingredients

  • 8 mini or Persian cucumbers Choose fresh cucumbers for the best crunch.
  • 1.5 tbsp low-sodium soy sauce Use tamari or coconut aminos if gluten-free.
  • 1.5 tbsp rice vinegar Adds tanginess; white grape juice vinegar is also an option.
  • 1 tsp sesame oil For depth of flavor.
  • 1 tbsp honey or maple syrup Sweetens the dressing beautifully.
  • 2 large garlic cloves Minced for a robust taste.
  • 1 tsp crushed or full red chili flakes Adjust heat according to your preference.
  • to taste sesame seeds For garnish and a nutty crunch.

Method

  1. Wash, dry, and cut the ends off the cucumbers. Place a cucumber between two chopsticks to prevent cutting all the way through. Cut the cucumber at a 45° angle, making thin diagonal slices on the top before flipping it over to make 90° angle cuts. Cut the spiraled cucumbers in half and add them to a large mixing bowl; alternatively, use a mandolin for thin slices.
  2. In a small bowl, whisk together all the dressing ingredients until well combined. Taste as you go and adjust seasonings based on your preference for sweetness and saltiness.
  3. Pour the prepared dressing over the cucumbers in your mixing bowl and mix gently to combine without breaking them apart. Garnish with finely sliced green onion and sprinkle sesame seeds on top for an added crunch before serving.
