Ingredients

  • 12 ounces dark chocolate I used 72% cacao for a rich flavor.
  • ½ cup peanut butter Optional but adds creaminess.
  • 3 cups puffed quinoa The star ingredient providing crunch.
  • flaky salt For garnish, optional; Maldon salt adds a nice touch.

Method

  1. Prepare Your Baking Sheet: Start by lining a baking sheet with parchment paper or spray a mini muffin tin with cooking spray.
  2. Melt the Dark Chocolate: In a microwave-safe bowl, combine the dark chocolate and peanut butter if using. Microwave in short bursts, stirring frequently until smooth.
  3. Combine Ingredients: Once melted, gently fold in the puffed quinoa until all pieces are evenly coated with the chocolate mixture.
  4. Shape and Garnish: Spoon the chocolate-covered quinoa mixture onto your prepared baking sheet or mini muffin tin, pressing down slightly. Sprinkle flaky salt on top if desired.
  5. Allow to Set: Place your baking sheet or muffin tin in the refrigerator for about 30 minutes or until set completely.
  6. Enjoy Your Treats: Once set, remove from the fridge and break apart or pop out of the muffin tin.
