Ingredients

  • 90 g Powdered sugar Adds sweetness and helps create a tender crust.
  • 230 g Pastry flour Can be replaced with all-purpose flour if needed.
  • 30 g Almond flour Provides a nutty flavor and additional tenderness.
  • 1 pinch Salt Enhances the overall flavor of the pastry.
  • 110 g Unsalted butter Use very cold butter cut into chunks for best results.
  • 50 g Egg Approximately one room temperature egg binds the ingredients together.

Method

  1. Prepare Your Ingredients: Measure out all your ingredients accurately. Keep the cold butter in the fridge until ready to use.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the powdered sugar, pastry flour, almond flour, and salt until well combined.
  3. Incorporate Butter: Add the cold chunks of unsalted butter into the dry mixture and work it into the flour mixture until it resembles coarse crumbs.
  4. Add Egg and Form Dough: Create a well in the center of your mixture, add the egg, and gently mix until just combined; shape it into a disc.
  5. Chill Dough: Wrap your dough disc in plastic wrap and refrigerate for at least one hour or overnight.
  6. Roll Out & Bake: After chilling, roll out your dough on a lightly floured surface to about 3mm thick and transfer it into tart pans.
