Ingredients

  • 3.5 cups all-purpose flour Essential for creating the dough's structure.
  • 2.25 tsp instant yeast Helps the dough rise, giving it a light texture.
  • 1 tbsp sugar Adds a hint of sweetness to balance flavors.
  • 1 tsp salt Enhances taste and strengthens gluten in the dough.
  • 1 cup warm water Activates yeast when mixed with sugar.
  • 2 tbsp butter Provides richness and flavor to the dough.
  • 8 sticks mozzarella cheese The gooey filling that makes these pretzels special.
  • 0.25 cup grated parmesan cheese Adds a nutty flavor and enhances the savory profile.
  • 2 tbsp fresh rosemary Gives an aromatic touch that elevates the overall taste.
  • 1 tsp garlic powder Introduces a warm, savory note to each bite.
  • 0.5 tsp black pepper Adds a subtle kick to the seasoning blend.
  • 8 cups water Used for the baking soda bath which gives pretzels their distinctive crust.
  • 0.33 cup baking soda Key ingredient for achieving that classic pretzel flavor and color.
  • 1 tbsp water Combined with egg yolk for an effective wash.

Method

  1. In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until it becomes foamy. Add in the melted butter, salt, and flour, then mix until a dough forms. Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic.
  2. Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm spot for 1 hour or until doubled in size.
  3. Punch down the dough and divide it into 8 equal portions. Roll each portion into a 12-inch rope, then flatten it slightly to create a long strip.
  4. Place a mozzarella stick in the center of each strip of dough. Fold the dough over the cheese and pinch the edges tightly to seal. Carefully roll it into a rope again to ensure the cheese is fully enclosed.
  5. Take each cheese-filled rope and twist it into a pretzel shape by crossing the ends over each other and pressing them down.
  6. In a large pot, bring 8 cups of water to a boil. Slowly add ⅓ cup of baking soda (it will bubble up). Using a slotted spoon, dip each pretzel in the water for 15-20 seconds, then transfer to a parchment-lined baking sheet.
