Ingredients

  • 4 pieces boneless, skinless chicken breasts 1.5 lbs
  • 3 cloves fresh garlic minced
  • 1/4 cup hot honey
  • 2 tbsp low-sodium soy sauce
  • 2 pieces bell peppers any color, sliced
  • 1 cup cooked rice or quinoa
  • 2 pieces green onions thinly sliced
  • 1 tbsp sesame oil

Method

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine hot honey, soy sauce, and minced garlic. Add the boneless chicken breasts into this marinade, ensuring they are well coated. Allow them to marinate for at least 15 minutes.
  3. Heat sesame oil in a skillet over medium heat. Add sliced bell peppers and sauté them until they become softened and slightly caramelized, about 5 minutes. Set aside.
  4. Transfer the marinated chicken breasts into an oven-safe dish. Bake for approximately 20-25 minutes or until fully cooked through.
  5. Fluff up your choice of rice or quinoa in serving bowls. Top each bowl with slices of baked chicken, sautéed bell peppers, and garnish with thinly sliced green onions.
