Vegetables
  • 1 cup chopped onion yellow or white
  • 2 cloves garlic minced
  • 1 cup chopped bell pepper any color
  • 1 cup chopped spinach fresh or frozen
Sauce
  • 1 can diced tomatoes 14.5 oz
  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
Garnish
  • 1/4 cup grated Parmesan cheese optional

Method

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
Prepare the Turkey and Vegetables
  1. In a skillet over medium heat, add the ground turkey. Cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.

Make the Sauce
  1. Stir in the diced tomatoes, tomato paste, Italian seasoning, salt, and black pepper. Simmer for 5-7 minutes until the sauce thickens slightly.
  2. Add the chopped spinach and cook until wilted, about 2 minutes.

  2. Serve hot, garnished with grated Parmesan cheese if desired.
