Ingredients

  • 1 whole head garlic For roasting and adding a sweet, mellow flavor.
  • 1 tablespoon extra-virgin olive oil Enhances richness in the dough and garlic.
  • to taste coarse sea salt For seasoning the garlic before roasting.
  • 1.5 cups water Room temperature, ~70°F / 21°C, activates the yeast and hydrates the flour.
  • 1 teaspoon active dry yeast Leavens the bread, helping it rise beautifully.
  • 3 cups bread or all-purpose flour Forms the structure of the loaf.
  • 0.5 teaspoon dried oregano Adds aromatic depth to the flavor profile.
  • 1 teaspoon kosher or fine sea salt Balances all the flavors in the bread.
  • 2 teaspoons finely chopped fresh rosemary Infuses earthy notes that complement garlic perfectly.
  • 1 head roasted garlic cloves Smashed, provides a rich, sweet flavor throughout the dough.

Method

  1. Preheat your oven to 400°F (204°C). Cut the head of garlic in half horizontally, drizzle the exposed cloves with half of the olive oil, and season with salt and pepper. Wrap it tightly in foil and roast for about 40 minutes until soft and fragrant. Once done, allow it to cool slightly before extracting the roasted cloves from their skins.
  2. In a small bowl, combine room-temperature water with active dry yeast and let it sit for 10-15 minutes until bubbly. In a large mixing bowl, whisk together flour, kosher salt, oregano, and chopped rosemary. Add in the yeast mixture along with the smashed roasted garlic and remaining olive oil. Stir everything together using a spatula until a sticky dough forms.
  3. Cover your dough with a clean kitchen towel or plastic wrap and let it rise at room temperature for approximately 8-10 hours, or until it has doubled in size.
  4. Once risen, gently turn out your dough onto a floured surface without deflating it too much. Shape it into a ball by folding edges toward the center while maintaining surface tension on top. Place seam-side up in a floured bowl or basket, cover lightly, and refrigerate for at least one hour or up to 48 hours for an even deeper flavor.
  5. About 30 minutes before baking, preheat your oven to 450°F (232°C) while placing a Dutch oven inside to heat up as well. Carefully remove your chilled dough from the refrigerator and flip it onto parchment paper seam-side down; score the top of your loaf using a sharp blade to create steam vents during baking.
  6. Place your scored dough along with parchment into the hot Dutch oven, cover it with its lid, and bake for 30 minutes. Afterward, uncover the pot and continue baking for another 15-20 minutes until golden brown.
  7. Once baked to perfection, remove your artisan bread from the Dutch oven and let it cool on a wire rack for at least one hour before slicing into it.
