Ingredients

  • 2 lbs boneless, skinless chicken breasts (or thighs) Choose thighs for extra juiciness if desired.
  • 2 cans cream of chicken soup Adds creaminess and flavor to the base.
  • 1 can cream of celery soup Enhances the savory profile of the dish.
  • 12 oz frozen mixed vegetables A convenient way to add color and nutrients.
  • 2 teaspoons garlic powder Use this to infuse flavor at multiple stages of cooking.
  • 2 teaspoons onion powder Provides a rich depth of taste without the fuss of chopping onions.
  • 2 teaspoons black pepper Adds a subtle kick to balance the creaminess.
  • 1 can homestyle biscuits (or homemade drop biscuits) Perfect for topping your pot pie and soaking up all the flavors.

Method

  1. Start by spraying your crockpot liner with non-stick spray. Lay the chicken breasts flat in the bottom of the crockpot, then season them generously with 1 teaspoon each of garlic powder, onion powder, and black pepper.
  2. Cover the seasoned chicken breasts with both cans of cream of chicken soup and cream of celery soup.
  3. Spread the frozen mixed vegetables evenly over top. Sprinkle the remaining teaspoon of garlic powder, onion powder, and black pepper over the vegetables.
  4. Place the lid on your crockpot and set it to cook on low for 6 to 8 hours or on high for 4 to 6 hours until the chicken is cooked through and shreds easily with a fork.
  5. About 15 to 20 minutes before you're ready to serve, bake your biscuits according to package directions or your homemade recipe for drop biscuits if preferred.
  6. As soon as your biscuits are nearly done baking, use two forks to shred the cooked chicken in the crockpot, stirring it into the gravy and vegetables until well combined. Serve each portion topped with a warm biscuit either whole or split in half.
