Gather all your ingredients on a clean countertop. Make sure your dill havarti cheese is grated for easy melting, and your dill pickles are chopped finely and patted dry.
Take one slice of sourdough bread and place it on a flat surface. Evenly distribute half of the grated dill havarti cheese over the bread, followed by a layer of chopped dill pickles. Top this with another layer of cheese before placing the second slice of sourdough on top.
Spread one tablespoon of salted butter evenly over the top slice of bread.
Heat a skillet over medium heat and carefully place your sandwich butter-side down onto it. Cook for about 3-5 minutes until golden brown, then flip it gently using a spatula, adding the remaining butter on top before grilling again.
Once both sides are golden brown and crispy, take off the heat and immediately sprinkle some dill pickle flavored potato chips inside before closing up your sandwich completely.
Slice your sandwich diagonally for presentation and serve warm alongside additional pickle chips if desired.
