Soup Base
  • 1 lb Italian sausage casings removed
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 medium carrot diced
  • 1 medium celery stalk diced
  • 4 cups chicken broth low sodium
  • 1 cup diced tomatoes canned, with juice
  • 1 cup ditalini pasta uncooked
  • 1 cup heavy cream
  • 1 cup Parmesan cheese grated
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Method

Prepare the Soup
  1. In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a wooden spoon, about 5 minutes.
  2. Add the diced onion, carrot, and celery to the pot. Sauté until the vegetables are softened, about 5 minutes.
  3. Stir in the minced garlic and Italian seasoning, cooking for an additional minute until fragrant.
  4. Pour in the chicken broth and diced tomatoes, bringing the mixture to a boil.
  5. Once boiling, add the ditalini pasta and cook according to package instructions until al dente, about 8-10 minutes.
  6. Reduce heat to low and stir in the heavy cream and grated Parmesan cheese until well combined. Season with salt and pepper to taste.
  7. Serve hot, garnished with additional Parmesan cheese if desired.
