Ingredients

Cajun Shrimp and Salmon
  • 1 lb shrimp, peeled and deveined large shrimp
  • 1 lb salmon fillet skinless
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil for cooking
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
Garlic Cream Sauce
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 tbsp butter
  • 1 tbsp parsley, chopped for garnish
Mashed Potatoes
  • 2 lb potatoes, peeled and cubed
  • 1/2 cup milk warm
  • 4 tbsp butter softened
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
Green Beans
  • 1 lb green beans, trimmed
  • 1 tbsp olive oil
  • 1 tsp salt to taste

Method

Prepare the Mashed Potatoes
  1. Boil the potatoes in salted water until tender, about 15 minutes. Drain and return to the pot.
  2. Add milk, butter, salt, and pepper. Mash until smooth and creamy.
Cook the Green Beans
  1. Steam the green beans until bright green and tender, about 5-7 minutes.
  2. Toss with olive oil and salt before serving.
Cook the Seafood
  1. In a large skillet, heat olive oil over medium-high heat. Season shrimp and salmon with Cajun seasoning, salt, and pepper.
  2. Cook shrimp for 3-4 minutes until pink and opaque. Remove and set aside.
  3. Cook salmon for 4-5 minutes on each side until cooked through. Remove from skillet.
Make the Garlic Cream Sauce
  1. In the same skillet, melt butter and sauté garlic until fragrant, about 1 minute.
  2. Pour in heavy cream and simmer for 3-4 minutes until slightly thickened. Return shrimp and salmon to the skillet to coat in the sauce.
Serve
  1. Plate the mashed potatoes, green beans, and top with Cajun shrimp and salmon drizzled with garlic cream sauce.
  2. Garnish with chopped parsley and serve immediately.
