Ingredients

  • 4 fillets salmon 6 oz each
  • 1 package Boursin Garlic & Fine Herbs cheese 5.2 oz
  • 1 tbsp olive oil
  • 1 clove garlic minced
  • ½ lemon zest and juice
  • to taste salt
  • to taste black pepper
  • 1 tbsp fresh parsley chopped (optional)
  • to taste cherry tomatoes or asparagus optional, for roasting alongside

Method

  1. Preheat your oven to 400°F (200°C). Lightly oil a baking dish or line it with parchment paper.
  2. Pat the salmon fillets dry and place them skin-side down in the baking dish. Drizzle olive oil over them and season with salt, black pepper, minced garlic, and lemon zest.
  3. Break the Boursin cheese into smaller chunks and distribute evenly over each salmon fillet.
  4. Bake for about 15–18 minutes or until the salmon is opaque and flakes easily. Optionally, broil for 1–2 minutes for a golden top.
  5. Squeeze fresh lemon juice over the baked salmon and garnish with chopped parsley before serving.
