Ingredients

  • 4-5 lb beef shoulder roast or boston butt roast Choose a well-marbled cut for maximum tenderness.
  • 2 tablespoons neutral oil Use an oil with a high smoke point for searing.
  • 2 cups fresh apple cider Make sure to use real apple cider, not vinegar.
  • 2 cups chicken stock or broth This adds depth to the braising liquid.
  • 2 tablespoons dijon mustard For a hint of tanginess that complements the sweetness of the cider.
  • 1 tablespoon dehydrated minced onion This enhances the overall flavor without adding moisture.
  • 1 head garlic Roasting garlic brings out its natural sweetness.
  • 3 sprigs rosemary Fresh herbs elevate the dish's aroma and taste.
  • 4 sprigs thyme Adds an earthy note that pairs beautifully with beef.
  • 1 red onion Cut into thick slices for added sweetness and texture.
  • 2 firm and slightly tart apples These should be peeled and cut into wedges to balance the flavors.
  • kosher salt Essential for seasoning throughout the cooking process.
  • freshly cracked black pepper Enhances flavor without overpowering.

Method

  1. Preheat your oven to 325°F (163°C).
  2. Trim any excess fat from your beef shoulder roast if necessary, then cut it into four large pieces or leave it whole if it's bone-in. Drying the meat with paper towels helps achieve a nice sear.
  3. Generously season all sides of the beef pieces with kosher salt and freshly cracked black pepper. In a large dutch oven, heat neutral oil over medium-high heat until shimmering, then add the beef in batches, searing for about 4-5 minutes per side until browned deeply.
  4. While searing, whisk together apple cider, chicken stock or broth, dijon mustard, and dehydrated minced onion in a bowl until well combined. Use kitchen twine to bundle your rosemary and thyme sprigs together for easy removal later on.
